Vegetarian Month!

Okay folks, we are already 1 week into vegetarian month and I need some more recipes, so please let me know if you have a good one! We are eating fish, just no other meat. I admit, we are not going die hard (the kids eat chicken nuggets if I am out of options for lunch, and I had to eat Brenna's soup, it was delicious) But we are really trying, so please post some more ideas for me! Summer salads, great soups, whatever you got, I will take it! Or we will be eating beans and rice a lot (Puerto Rican of course).

for fun. Its a good challenge and helps us eat healthier. Of course we didn't start it till after the 4th and vacation, so its really not even a whole month.
We had grilled tilapia the other day, it was great! We can still grill...

Yay for veggies. We've been trying to limit the meat because I'm cheap. Keep us posted on how things go. PS Can't wait to hear where you're moving, but I'm guessing it's not Redmond, WA.

I'm not going to lie it was a good bit of work, but they were super yummy!

I also saw a "Spaghetti with Creamy Spinach and Tarragon" that looked good but I haven't tried it yet. Maybe tonight1

Have fun being Vegan. I don't think I could do it. Eat Healthy, I can do, but not without a little meat.

You should have told me, and I could have left out the beef. If you want the lentil soup recipe, let me know. We also have pita salad that I think you had once with us. We made potato soup last night (although it has evaporated milk-probably a no-no for G), and Ryan's sister has an excellent summer salad that you could leave out the chicken. Let me know what you want, and good luck!

Is chicken broth ok? The possibilities are endless... cheese lasagna, cheese enchiladas, vegetarian chili, pizza. I'd probably eat spaghetti all month though.
